Turning around a struggling restaurant
The context
An Asian speciality restaurant in real difficulty: fixed costs that had not been renegotiated for years — energy, insurance, banking contracts — and a menu whose margins nobody had recalculated.
What we did
All purchasing was reviewed and fixed costs renegotiated with suppliers. The menu margins were analysed and compared with sector standards: they were not holding up. A specialist chef came in to rebuild the menu entirely, dish by dish, in line with the target profitability.
